For my first effort I peeled and liquidized fresh peachs. An attractive bright yellow when blitzed they turn to an unattractive mustard colour in about an hour or perhaps less. I have since read a recipe that says one should poach peeled and stoned peaches (preferably white variety) then pass through a sieve. I have yet to try this.
